A Simple Seaside Thanksgiving, Airstream Style

Hubby, B and I awoke Thanksgiving morning to awe inspiring gale-force winds that literally shook the Airstream like a maple leaf being torn from its tree. The Doe Bay Resort retreat tearfully was at a seasonal transition to winter destinations. We were both honored and grateful to be their guests for one of the most memorable times in our lives. I don't think there is one particular highlight one can single out about Doe Bay. It is the synchronicity between all its moving parts. The spectacular coastline exposure, inspiring views, hot pools, sauna, yoga facilities and classes, the culinary artistry at the Cafe, and most importantly, its friends and family. We will miss you dearly, Doe Bay.  Thank you for the incredible, life changing experience.  Heaven on Earth this is. xoxo.

We now slowly make our way back to the mainland. Our very last stop in the San Juan Islands is Lopez Island.  Odlin County Park, to be specific.  To celebrate Thanksgiving.  A simple meal prepared on our Airstream.  Just the three of us.

Message in a Bottle and a Turkey Cranberry Sandwich for Lunch

B was writing a letter.  But not just any letter.  This letter was special.  This letter was "magical with its possibilities."  It was going to be put inside of a bottle and set adrift out to sea.

"Do you think it will go to Japan?"  B asked me as he looked up from his letter.  "Possibly . . ." I said smiling at him.  I was in the Airstream kitchen preparing a turkey sandwich for lunch that would have a sweet and tart cranberry sauce layer over some cream cheese, oh and sunflower seeds too.  I put down my spatula and went over to him.

"Wherever this bottle shall land, it was meant to be.  Maybe it will float all the way to Japan or maybe it will float over to Lopez Island.  Maybe it will float all the way to Australia and land on the beautiful white sand beaches and along the way, maybe your bottle will experience dark and scary ocean storms and float up and down over super high waves.  Maybe it will become a friend of a fish, or a big whale or maybe it will just float along and be warm from the shining sun.  Whoever finds it, I think will feel so lucky too.  Would you be excited if you found a message in a bottle?"

B sat there looking at me with his eyes big and wide.  He quietly resumed working on his letter being extra careful with the spelling of his words and making sure everything was perfect.

"Do you like it mommy?" he proudly lifted up his letter to show me.  "It's perfect!" and I meant it.  It was the perfect letter, ever.

"Now, let's go for a walk and set your bottle out to sea . . ."

The bottle was launched.  B picked a spot, aimed for it and was happy with the outcome.  It landed with a big splash and began to slowly float it's way out to sea.  I took out my zoon lens on my camera and took about 100 pictures of the bottle slowly floating away . . .

"Now we wait," I said.  We watched the bottle bob up and down and work it's way out to sea and then decided it was time to go.  Afterall, we did have a turkey sandwich waiting for us in the Airstream kitchen.

Rustic bread, some arugula, thick cut organic turkey and my very own cranberry sauce.  Don't forget the cream cheese and a sprinkle of sunflower seeds (we love the roasted and salted on our sandwiches).

If you would like the recipe for my cranberry sauce you can find it here.  I made this when we had our very first Airstream Thanksgiving Dinner.  Which, by the way, we are going to have again.  I love celebrating Thanksgiving in our Airstream in the San Juan Islands and using all the local and fresh ingredients the island farms have to offer.

Lunchtime Butcher Block Smorgasborg in our Airstream

If you are not in the mood to cook, this is an easy way to feed your family.  Everyone gets a little bit of what they like, prepared their way.   Simply grab your butcher block cutting board, place on it whatever you think your family would like in order to prepare a sandwich in addition to some nice cheeses, dips, spreads, veggies, etc. The possibilities are endless and my boys always say how much they enjoy this meal.

Where's my favorite place to cook?

On my Airstream, that is!  I absolutely adore this small space kitchen, sometimes I will even cook in it when the Airstream is at home.  Why?  The generous countertops, big double sinks, the abundant storage, the three range gas cooktop and my handy little oven with an awesome broiler (with real flames!) all contained in a small space for cooking simple meals - the same meals you cook at home can be a reality on the road.  For exampe, my little oven managed to cook a 10 pound Thanksgiving turkey, no problem!  Plus clean up is a breeze.  What I love about our Airstream's kitchen is that everything has it's place so there is no need to store/keep things all over your countertops.  Everything is literally right at your fingertips and using limited gadgets and appliances makes your happy cooking experience even more so.  Our Dometic fridge is also a great size where I have been able to keep upwards of 1 weeks worth of recipe's perishables.

An Airstream Thanksgiving

Happy Thanksgiving!

This year we decided to opt out of the traditional big family get together and celebrate the holiday on our Airstream, just the three of us up on the San Juan Islands here in Washington State.  I have been very excited about the idea of cooking a traditional Thanksgiving feast in a small space on our Airstream and I am happy to say everything turned out perfectly.  As a matter of fact, I think this is probably the best Thanksgiving dinner I have ever made.

We shopped at Orcas Homegrown Market & Deli for our (special) turkey.  This is an incredible market as they carry everything you can possibly imagine from exotic hard to find herbs to fresh caught seafood and a plethora of meticulously arranged produce.

Our Thanksgiving menu consisted of roast turkey, baked mashed potatoes and brown sugar glazed carrots along with my own cranberry sauce and gravy.

Our turkey from Shelton's thanks to Orcas Homegrown Market & Deli.  I should mention that never, ever again will I buy a turkey that is not organic/free range.  After years of buying supermarket turkey's, this one was so different in every way.  The texture of the meat was so long and lean and incredibly tender; there was literally no fat to trim and the taste was something I have never experienced before.

 

Fully prepped -- btw, that is my iPad in the background with the best (in my opinion) recipe organizer app called Paprika.

I didn't follow the roasted turkey recipe exactly.  I subsitutted sage and rosemary from my garden and I didn't melt the butter.  Instead (since the turkey was so lean) I put pats of butter under the skin of the breast.

My simple cranberry sauce -- just a bag of cranberries, one squeezed orange, two cinnamon sticks and about one cup of light brown sugar.

Put all ingredients into a pot and bring to boil and cook until you reach a consistency that is to your preference.
