A little over five years ago we fell in love.  Hubby and I that is - fell in love with Roslyn, Washington.  Have you heard of it?  It is one of the most beautiful, little towns you can come across.  Deep history, friendly folk and sweeping views all rolled into one. Not to mention, this is where Northern Exposure was filmed.

Hubby and I purchased a "little slice of Heaven" here in Roslyn.  It is (to us) the perfect piece of land for our Airstream to stay when we come to visit.  I am really looking forward to sharing with you, everything Roslyn has to offer.

When I woke up on our first morning here, the stillness outdoors was amazing.  The sun's rays were just emerging and things were starting to happen. I was happy.  Calm.

Relaxed.

Breakfast was simple (really!) crepes stuffed with lox, fluffy scrambled eggs, melted Gruyere cheese topped with creme fraiche and chives.  The basic crepe recipe can be found here.

This is going to sound crazy, to some.

But after years of longing for a farm fresh egg, my dream has finally come true.  Really.

We were driving along one of the most beautiful scenic drives on the San Juan Islands when I reached over and squeezed hubby's arm (to use as my own steering wheel in case he didn't abide) and declared him to:  "Stop!  Stop - Stop!!" Pointing excitedly to where he should pull off -- this is what we saw -- possibly the cutest Farm Stand I had ever seen (and I will surely capitalize "Farm Stand," because to me, this was Heaven).

It was quiet here.  It was peaceful here.  It smelled of fresh flowers and the birds were singing and that funny rooster was, well, funny and curious.

Need I say more?  Pictures certainly do speak 1,000 words and this one could quite possibly exceed that.

But why is it when your hubby is waiting for you while you shop, you can never relax and just enjoy yourself?  He was waiting in the car and I was perspiring just waiting for his beckoning call of 'hurry up honey,' but this time, he got out.  He got out of the car and was amazed too.

"Wow honey, this is really nice."

I couldn't have agreed more.

I could hardly wait to get back to the Airstream where I would prepare baked eggs . . .

On the morning of our second day in Rockaway, Oregon, where our Airstream was camped right across from the ocean, we woke up to the endings of a coastal storm.   The night was amazing -- incredible high winds, huge waves crashing in the distance, rain pounding down on the Airstream.  The Airstream was literally rocking back and forth from those winds -- hubby commented how it felt like it used to when we were on our boat.  The night definitely gave the name "Land Yacht" some true meaning.  But while the Airstream was gently rocking from those high winds, I had a warm and fuzzy feeling inside knowing we were toasty warm, cozy and safe from those elements.  I don't think I ever slept so good as I did that night.

On the menu for breakfast was a breakfast scramble to go -- we took these little tasty pockets of heaven down to the beach and enjoyed the sweeping views of the Oregon coast.

I could have this for breakfast, lunch and dinner, everyday.  Hubby and B also agree.   It is so simple to make and so good!

I prepared this simple meal after a big day spent on the beach.  We all sat together inside the Airstream where it was warm and cozy and enjoyed this delicious meal while watching the end of the day happenings on the beach.  People were packing up and rushing to get home -- but we, on the other hand, were already home.
